The due date is now officially just over 2 weeks away. Our bags are packed, and we're about as ready as we can be…well as ready as one canactually be for a first baby.
So I've heard that women often have a nesting phase when they're pregnant…especially if it's their first pregnancy. They decide it's a good time to repaint the house or get new carpet in all of the bedrooms. I get it. The baby will consume all of your free time soon, so let's tackle those projects that are lurking around in the back of your mind. The good news for me is that we didn't have any of those projects on the back burner. Or so I thought.
We've done more housework these past several months that we've done in the entire time we've lived here! There have been no less than 10 different contractors out here to give us quotes on various projects. We've changed out most of the windows in the house. We've gotten new siding. We've had a dehumidifier and an additional egress installed into our basement. (To make room for the baby, I moved my office from the spare bedroom down to the basement.) I've been shocked at the amount of work that we've done around here lately! Oh, and did I mention changing the curtains and curtain rods, too? Yeah.
But I can't get on my wife's case for all of this so-called nesting. I've definitely tackled a few extra projects on my own. For example, last Spring we dropped by a church yard sale to see if they had any useful baby items. I came across an old wooden high chair that was worn and weathered, but totally in good condition. I decided the summer would be a good time to refinish said high chair.
Woodworking doesn't run in my family, but I was determined to make this high chair look new again! From multiple rounds of sanding to staining to coating with polyurethane, this high chair has become my nesting project. As is often the case, I procrastinated a little bit…but the baby is coming soon, and I needed to finish up this project! So I've been spending all of my after-work time making this chair look as good as new again. And I think I'm almost there!
With all of the chores and projects we've been doing around the house lately, dinner has often become an afterthought. We look up and see that it's 6:30 or 7:00, and we think, "Hmmm…what can we cobble together for dinner tonight?" That's when I re-discovered the wonderful invention known as the Crock Pot.
I can prep all of the ingredients in the morning, turn it on and let dinner cook itself for the rest of the day. Seriously. Dinner just cooks itself. Why can't that high chair just refinish itself? Or why can't the siding on our house just replace itself? Ah well, I'm grateful that the Crock Pot has taken out the stress of dinner planning lately!
Easy Beef Stew
The other night, I grabbed some veggies and a roast and tossed them into the Crock Pot along with the Beef Stew flavor from Campbell's line of Slow Cooker Sauces. Talk about easy! The hardest part was trying to actually do my work while that easy beef stew was simmering away in the kitchen.
You see, whoever built this house decided that it would be a good idea to put the air intake for the heating/air system right there in the kitchen. So our entire house was literally filled with the mouth-watering smells of beef stew. Even the dogs were walking around with their noses up in the air all day!
I decided to take this easy beef stew even one step further and top it with a rosemary biscuit topping. This step only takes a couple extra minutes there at the very end, and you'll definitely be glad you did it! The biscuits bake up nice and golden brown on top, but they soak up some of the juices from the beef stew and veggies below. My wife and I almost fought over who got the last biscuit. (Don't worry…I gave it to her!)
With our son set to arrive in a couple of weeks, our families have already told us that they will be coming up for extended time to help us get used to the new routine. I know I will be forever grateful for the help as I hear that sleep is pretty much non-existent with a new baby around. With all of the guests in town, I suspect that our Crock Pot will be put to good use! I'm also thinking that the Crock Pot is going to be my new favorite friend on game day. Can you imagine serving up some Apple Bourbon Pulled Pork sandwiches just in time for kick-off…and not spending more than about a few minutes to make 'em? I've got important game day routines, and standing in the kitchen all day is not one of them!
In addition to the Beef Stew variety, Campbell's has a number of other flavors in their line of Slow Cooker Sauces. Hearty Beef & Vegetable Stew
For the Beef Stew
- 4-5 medium carrots sliced into ½" pieces
- 2 celery stalks sliced into ½" pieces
- 2 large Russet potatoes sliced into ¾" cubes
- 1 medium white onion coarsely chopped
- 1 Tbsp garlic minced
- 1 cup peas frozen or fresh
- 2 pounds stew beef rump, sirloin, chuck roast, top or bottom round, cut into ¾" cubes
- 1 12-oz package Campbell's Slow Cooker Beef Stew sauce
For the Rosemary Biscuit Topping
- 1½ cups all-purpose flour
- 2 tsp baking powder
- ¾ tsp salt
- ¾ tsp black pepper
- 1 tsp dried rosemary
- 3 oz. 6 Tbsp unsalted butter, cold
- 2/3 cup buttermilk
For the Beef Stew

Place all ingredients in a slow cooker. Pour sauce on top.

Cover and cook on low for 7-8 hours or high for 4-5 hours, or until beef is fork-tender.
For the Rosemary Biscuit Topping

Note: Wait for the beef stew to finish (or be close to finished) cooking before beginning this step.

Preheat oven to 425°F.

In a medium-sized mixing bowl, combine the flour, baking powder, salt, pepper and rosemary. Mix until well combined.

Cut the butter into ½" cubes and add to the bowl of dry ingredients.

Using a pastry cutter (or two table knives), cut the butter into the dry ingredients until butter pieces are pea-sized.

Add the buttermilk and stir until absorbed. (Note: This dough is fairly sticky.)

Transfer Beef Stew into a large 9"x13" casserole dish.

Divide the biscuit batter into 12 pieces. Press each into a rough circle and place on top of beef stew.

Bake at 425°F for 20-22 minutes, or until biscuit topping is golden brown.

Remove from oven and let cool for 10 minutes before serving.
